My Favorite Protein-Packed Salad
I get lots of questions about different recipes and what I love to eat so I thought I would share one of my favorite protein-packed salad recipes with you. I could literally eat this EVERY. SINGLE. DAY. - and sometimes do :)
It’s super filling, pretty simple to throw together, very tasty, and can be easily customized to you and your specific tastes. Try it out and let me know what you think!
Mixed leafy greens + a mixture of any types of veggies you love. Here’s a list of the ones I switch up:
Steamed Broccoli and/or Cauliflower
Your favorite protein source - I love to add baked tempeh!
Smoky Tahini Mustard Dressing:
*Mix together all the following in a small bowl and add water until you reach your desired consistency.
1 tbsp tahini (This one is my favorite! It’s so creamy and delicious!)
2-4 tbsp yellow mustard
A few dashes of black pepper
A few dashes of smoked paprika (This one is THE best!)
Optional: To make it a little sweeter, add in a tablespoon of maple syrup.
Throw all of the veggies, protein, and dressing together, mix it up good and enjoy it with a side of some baked potato fries, roasted sweet potatoes, some toast or whatever else you want :)
Like I said before, this is a very filling and satisfying meal - You have a good combination of lots of veggies, protein, carbs (from the potatoes, bread, etc.) and fat from the tahini. This will keep you satiated and feeling good and energized for hours on end. So eat up and enjoy!
